What you are buying

  • Rumen, reticulum, omasum: the parts of the stomach. The beef stomach has several compartments. The rumen (blanket tripe) is the largest and the most common tripe, smooth or with small papillae. The reticulum has a honeycomb surface (honeycomb tripe). The omasum is made of thin folds, like the pages of a book (book or bible tripe). ATC supplies the rumen only, not reticulum or omasum.
  • Green, washed, bleached, unbleached: green: raw tripe, neither deep-washed nor bleached, dark to greenish in colour; washed: emptied and rinsed, natural grey to brown colour; bleached: washed, then treated to obtain a white colour; unbleached (natural): cleaned without any bleaching treatment, it keeps its natural colour.
  • Version 1, raw green tripe: origin European Union and South America, in 10 kg fixed-weight or 20 kg variable-weight cartons.
  • Version 2, unbleached cooked rumen (Brazil): natural, unbleached, cooked rumen, without honeycomb, about 3.0 kg per piece, in polyethylene, in 18–22 kg net catch-weight cartons.

Frequently asked questions

What is the difference between your two tripe versions?

Green tripe is raw, neither deep-washed nor bleached, from the European Union or South America. The second version is natural rumen from Brazil, unbleached and cooked, without honeycomb.

Which part of the stomach am I buying?

ATC supplies the rumen only, in both versions. Reticulum (honeycomb) and omasum are not offered.

What do "washed", "bleached" and "unbleached" mean?

Washed tripe is emptied and rinsed. Bleached tripe is washed, then treated to become white. Unbleached, or natural, tripe keeps its grey to brown colour.

Where does your tripe come from?

Green tripe comes from the European Union and South America. The unbleached cooked rumen comes from Brazil, from plants under federal veterinary inspection. The identification mark is indicated on the health certificate.

How is the tripe packed?

Green tripe: 10 kg fixed-weight or 20 kg variable-weight carton. Brazil rumen: about 3.0 kg per piece, in polyethylene, 18–22 kg net catch-weight carton.

How many tonnes fit in one container?

For green tripe, about 26 t net per 40ft reefer (25–27.5 t depending on product and packing). For the Brazil rumen, packed in catch-weight cartons, the tonnage is confirmed in each offer.

Is halal available?

Yes. A halal certificate is available on request, for the full container.

What is the shelf life?

Green tripe: 12–24 months at -18 °C, depending on origin and producer. Brazil rumen: 12 months at -18 °C or below, not to be refrozen once thawed.
