Pork front feet or hind feet: what is the difference?

  • Front feet: the foot of the front leg, cut at the wrist. In the long cut, it is cut at the joint between the forearm and the wrist and keeps the carpal bones. Shorter piece: about 300–350 g and 13–17 cm depending on the cut, indicative.
  • Hind feet: the foot of the hind leg, cut above the hock joint, with the tarsus, metatarsus and toes. Longer and heavier piece: about 350–480 g and 16–22 cm depending on the cut.

Both are sold as two separate items, each in its own cartons. They can be loaded in the same container. In the trade they are also called pork trotters or pig feet.
